About Pinisi & Co

A hand holding green vanilla pods growing on the vine

The pinisi is Indonesia's great wooden sailing ship, built by hand and still at work across the archipelago. For us it stands for something simple: things worth carrying are worth carrying well.

Why vanilla

Few ingredients ask for so much patience. Every vanilla flower is pollinated by hand, each pod takes months to ripen on the vine, and curing takes months more. Harvest too soon and no amount of care will bring the flavour back. That patience is what you taste, and it's why real vanilla costs what it does.

What we do

We bring whole beans, powder, paste and caviar from Indonesia and Papua New Guinea to home bakers, chefs and food businesses. We publish the grade, size, moisture and vanillin range for our beans, so you can choose by what's in the pod rather than by adjectives on a label.

What to expect from us

  • Straight answers. If a bean isn't right for your recipe, we'll tell you.
  • Clear grades. Gourmet beans for the plate, extract beans for the bottle, and no confusion between them.
  • Real vanilla. No artificial vanillin, in any of our products.
